Candied Bacon Spice Mixture 1 cup sweet BBQ seasoning 1 tbsp coarse black pepper 1 cup turbinado sugar APPLE JELLY SYRUP 1 cup maple syrup ¾ cup liquified apple jelly |
1 Warm apple jelly in a saucepan until it becomes a liquid. 2 Mix into the maple syrup preferably in a squeeze bottle with a fine tip cap. 3 Process all ingredients in a small food processor until fine. Use caution when doing this! The fumes from the spices can be a little overwhelming if breathed in. 4 Line up bacon on a sheet pan with parchment paper and sprinkle bacon evenly with spice mixture. Cook bacon until halfway done. 5 Cover each strip of halfway cooked bacon with the syrup mixture and cook until crisp . 6 Watch constantly to prevent burning. Pull bacon off of sheet pan using tongs and place on a cooling rack until cool and crisp 7 Chop bacon when cool to your desired consistency. I prefer a fine chop to spread out the flavor in the dish. |
