Candied Bacon Spice Mixture

INGREDIENTS DIRECTIONS
Candied Bacon Spice Mixture
 1 cup sweet BBQ seasoning
 1 tbsp coarse black pepper
 1 cup turbinado sugar
APPLE JELLY SYRUP
 1 cup maple syrup
 ¾ cup liquified apple jelly

Warm apple jelly in a saucepan until it becomes a liquid.

Mix into the maple syrup preferably in a squeeze bottle with a fine tip cap.

Process all ingredients in a small food processor until fine. Use caution when doing this! The fumes from the spices can be a little overwhelming if breathed in.

Line up bacon on a sheet pan with parchment paper and sprinkle bacon evenly with spice mixture. Cook bacon until halfway done.

Cover each strip of halfway cooked bacon with the syrup mixture and cook until crisp .

Watch constantly to prevent burning. Pull bacon off of sheet pan using tongs and place on a cooling rack until cool and crisp

Chop bacon when cool to your desired consistency. I prefer a fine chop to spread out the flavor in the dish.
