Meatless Mushroom Meatballs

I love texture in foods. If the Dish seems to have a soft texture, then I would put a crunchy garnish on top. I like to make something out of nothing.

INGREDIENTS DIRECTIONS
 1 case Cremini or white mushrooms
 ½ cup Olive Oil
 ½ lb Margarine
 2 Yellow onion, small dice
 2 tbsp Minced garlic
 2 tbsp Fresh Ginger
 1 cup Parmesean Cheese
 2 cups Bread Crumbs * Oats may be substituted for gluten free
 ½ cup Fresh Parsley
 6 each Eggs
 2 tbsp Salt
 1 tbsp Pepper
 1 tbsp Red Pepper
 1 tbsp Cumin
 1 tbsp Cilantro
Teriyaki Glaze
 4 cups Cold Orange Juice
 ½ cup Corn starch
 1 cup Soy sauce
 5 ½ cups Brown Sugar
 ½ cup Honey

Rough chop mushrooms

Melt Olive oil & Butter in skillet large enough to hold mushrooms

Add Onions and cook until translucent

Add mushrooms and cook for 20 minutes

Thoroughly drain mushrooms and onions in a colander

Add all other ingredient’s

Shape into 3 oz. balls

Place on sheet pan with spray or parchment

Bake for 15 minutes

Toss in Teriyaki Glaze

Dissolve corn starch in orange juice

Bring soy sauce, brown sugar & Honey to a boil

Whisk in Orange juice mixture

14

Continue whisking until thickened

Use sauce immediately
