I have chosen to showcase our pimento cheese sandwich. This sandwich is a good representation of southern food.

¾ lb softened cream cheese 6 oz goat cheese ½ qt Dukes Mayonnaise ¼ cup smooth Dijon mustard 8 pieces - finely chopped candied bacon or good quality applewood smoked bacon ½ cup cup green olives 2 medium fresh red peppers roasted skins removed and deseeded or 1/2 a can of roasted red peppers 3 ¼ lbs extra sharp yellow cheddar cheese, shredded ½ lb extra sharp white cheddar cheese shredded ½ tsp espelette pepper powder 5 ½ tsp Hungarian paprika 1 tbsp Tabasco sauce 5 ½ tsp coarse cracked black pepper 5 ½ tsp kosher salt 5 ½ tsp smoked paprika |
Pimento Cheese 1 Blend cream cheese until smooth in a small mixer. 2 Add cream cheese and blend until smooth. 3 Add the rest of the ingredients EXCEPT for the two cheeses. 4 Blend on low speed until incorporated then add cheddar cheeses and mix until just blended together. |
