I have chosen to showcase our pimento cheese sandwich. This sandwich is a good representation of southern food.

Pimento Cheese

 ¾ lb softened cream cheese
 6 oz goat cheese
 ½ qt Dukes Mayonnaise
 ¼ cup smooth Dijon mustard
 8 pieces - finely chopped candied bacon or good quality applewood smoked bacon
 ½ cup cup green olives
 2 medium fresh red peppers roasted skins removed and deseeded or 1/2 a can of roasted red peppers
 3 ¼ lbs extra sharp yellow cheddar cheese, shredded
 ½ lb extra sharp white cheddar cheese shredded
 ½ tsp espelette pepper powder
 5 ½ tsp Hungarian paprika
 1 tbsp Tabasco sauce
 5 ½ tsp coarse cracked black pepper
 5 ½ tsp kosher salt
 5 ½ tsp smoked paprika
Pimento Cheese

Blend cream cheese until smooth in a small mixer.

Add cream cheese and blend until smooth.

Add the rest of the ingredients EXCEPT for the two cheeses.

Blend on low speed until incorporated then add cheddar cheeses and mix until just blended together.
