Adapted from "Taste of Home" I make these muffins for a client who has celiac disease and nut allergies ... I use gluten-free flour and there are chocolate chips that are allergy free. Everyone in the family can enjoy these and not feel deprived.
4 Large Eggs
2 cups Sugar
In a large bowl, beat the eggs, sugar, pumpkin and oil until smooth.
Combine the flour, baking soda, baking powder, cinnamon and salt.
