1 Steam or boil potatoes just until done but firm. Drain and set aside. 2 In a large sauté pan, add bacon over medium heat. Crisp and brown then add onions and peppers until soft. Add apples for a couple minutes. Stir in potatoes, sauté until cooked through about 5 minutes. 3 Season with salt and pepper. Taste and adjust seasoning. |
